Lately, one of the dish I love cooking for myself and Darrielle is Kimchi Jjigae.. A simple nutritious soup that goes very well with plain rice, here's the recipe of Kimchi Jjigae (I altered the ingredient used to make it kids-friendly):

Serves 2 adults and 1 kid
250gm Kimchi (squeeze out and retain the juice of the kimchi, set aside)
4 cloves of garlic, minced
2 shallots, sliced
1 young ginger, sliced (around 1 inch X 1 inch)
200gm pork belly, sliced thinly (u can add more if u likes meat)
300gm silken tofu, cut into 1 inch X i inch cubes
2 tablespoons of cooking wine (shaoxin or huadiao also can)
2 tablespoons of miso paste
some butter
-Heat up the wok with some oil, sautee the ginger, shallots and garlic till fragrant and slightly golden, push aside. Add in the pork belly slices.. Spread them out so that the fats can melt abit in contact of the heat..
-Add in the kimchi, stir fry thn add in the kimchi juice.. Stir fry until hot.
-Transfer everything to a small pot, add in around 1litre of water and bring to boil.
-Add in the tofu, cooking wine and simmer until pork belly slices are thoroughly cooked..
-Switch off the fire, stir in the miso and check taste..
-Add some scraps of butter to the soup just before serving
It might looks very red and fiery, but it's not spicy.. Oki, maybe just some very mild spiciness that normal spicy-food eating adults won't even detect..
Kimchi contain high amounts of fiber, vitamins A, B and C, calcium, iron and beta carotene. It also contains a good amount of Lactobacillus acidophilus (the same bacteria in Vitagen, Yakult and other pro-biotic drinks).. But in this case, most of these lactic acid bacterias n Vitamin C could have been killed off by heat..
Miso being a soy-based products, is rich in Vitamin B12, protein, antioxidant, reduce risk of some cancers and also protect against free radical and radiation.. Like Kimchi, it also contains Lactobacillus acidophilus.. I tries adding the miso last after the fire is off in hope that more lactic acid bacterias would be able to stay alive this way..
The health benefits of tofu goes without saying then, making this a great soup to nourish the little one's growing bodies..
Try it mommies, hope your little ones would love it like Darrielle did!
